Apple Crisp...

2 cups oatmeal, 2 cups sugar,
2 1/4 cups flour, 1 tbsp. cinnamon, 3/4 lbs. oleo, 14-16 cups sliced apples

Line a greased 12 x 18 pan with 3/4-inch layer of apples. Combine oatmeal, sugar, flour and cinnamon in large bowl. Cut in oleo until mixture resembles coarse crumbs and sprinkle over apples. Cook 30-35 minutes at 350º. Serve hot, topped with whipped cream.

Zucchini Relish...
10 cups diced zucchini, 1 cup pickling salt, 5 cups diced onions, 1 cup diced celery, 3 diced green peppers, 2 diced sweet red peppers, 2 tsp. turmeric, 1 tbsp. dry mustard, 3 tbsp. celery seed, 6 cups sugar, 5 cups white vinegar, 3 tbsp. cornstarch

Combine red and green peppers, onion, celery and zucchini in large bowl and sprinkle with salt. Let stand overnight. Drain vegetables and rinse thoroughly in colander. In large enameled kettle, combine remaining ingredients with vegetables and bring to a rolling boil. Reduce heat and simmer gently for 20 minutes. Seal in hot, sterilized jars.

Chicken and Mushrooms in Orange Sauce...
1 chicken, cut into serving size pieces OR 3 large split chicken breasts, 1/2-3/4 lb. fresh mushrooms, 1 sliced green pepper, 1 sliced yellow onion, 1 cup orange juice, 1/2 cup water, 1/4 cup white wine, 2 rounded tbsp. Cornstarch, 1 tbsp. frozen orange juice concentrate, optional, grated orange peel, optional

Lightly salt chicken and broil, skin side up, for 10 minutes, Slice vegetables and spread in bottom of large baking dish. Combine orange juice, water and wine with cornstarch, and cook over low heat until sauce thickens. For a stronger orange flavor add 1 tbsp. Frozen orange juice concentrate. Cover vegetables with chicken and top with sauce. Bake 1 hour at 350º, until chicken is tender. Sprinkle with grated orange peel for extra flavor and garnish.

Kaye's Meatloaf...
1 1/2 lbs. ground beef, 1 pkg. onion soup mix, 1 cup crushed cornflakes OR oatmeal, 2 eggs, 1/2 cup milk, 1/2 cup parmesan cheese, 1/2 cup chopped green pepper, optional

Combine all ingredients in large bowl and mix well. Shape meat in loaf pan and bake 60 minutes at 350º.
